Fuel Pressure Regulator Suggestions...

Hey everyone, this is my first post here!
I'm in the process of converting a Mercedes 190e 2.3 to EFI using MegaSquirt v3.0. Currently, I'm in the process of finishing up the details about what hardware I'm going to be using. I am using the 19lb/hr injectors from a Ford 4.6 (XL2E-C5A, I think), a fuel rail from a Saab 900 (matches the bore spacing) that I brazed mounts on to so it will affix to the stock intake manifold. My main concerns right now are this:
1. What kind of fuel pressure regulator should I use? I understand that the Ford injectors are rated at 3bar, and a quick eBay search turns up some "universal" adjustable fuel pressure regulators, but also a brand new 3 bar fuel pressure regulator from a VW 1.8t. Would this be a good choice? Link: eBay links not allowed. Another person (tjts1) who MS'd his 2.3 used an Isuzu Rodeo FPR:eBay links not allowed
2. Where should I buy the fuel fittings and fuel lines to make all of this stuff "go together," and how do I do it as inexpensively as possible? I'm okay with clamping some hose onto the FPR, but when it comes to using the correct fittings and how to properly barb them, etc, I'm a novice, and advice would be greatly appreciated.
3. What's the best car to get an IAT sensor from, and where should I mount it on my car? At the throttle-body? In the manifold?
I greatly appreciate any help that can be given, and will answer any questions as best as I can. Thanks much!
