I think the best thing you can do is to just buy a MS and go on.
Then you will walk into problems but you can then try to solve them here.

I don't know if the MS-II v3 is good enough for this but I will guess so because there are other bikes with MS.

4) Yes, but with EDIS, rev limiting has its issues. You can only retard a max of 25 degrees (with B&G code) on timing. There are fuel related options too but I'm not familiar with those. MS documentation should describe that very clearly.
